Avocados

These green Tex-Mex favorites are nutrient dense in many vitamins and minerals including vitamin B6, C, and potassium. They also contain healthy fats. One serving is ¼ of an avocado, which provides 60 calories – so enjoy these in moderation!

Store cut avocados with the pit inside, and coat it with olive oil or lemon juice prior to storing in an airtight container in the fridge. Try this handy gadget made especially for leftover avocados.

Avocados are delicious as a topping for soups, added to lettuce wraps or tacos, tossed in salads, or used as a spread for cucumbers or celery.

Asparagus

With only 20 calories in a ½ cup, this veggie offers tons of insoluble fiber, Vitamin K, and Vitamin A! Enjoy tasty asparagus raw, steamed, sauteed, stir-fried or mixed with other veggies. Varieties include white and purple asparagus which will add a lovely, colorful touch to any dish. These green stalks will pair beautifully with beans, poultry, and seafood.

Radishes

A radish is a root vegetable which has a mild to sharp flavor, depending on the variety. They are incredibly low in calories, yet high in Vitamin C. Roast or braise spicier radishes to mellow the flavor, then add them to chicken dishes, ham salads or soup. Try a thinly sliced, beautifully pink and crunchy watermelon radish in your next salad!

Artichokes

It’s not only fun to peel and eat an artichoke all the way down to the delicious center, it’s good for you! This veggie is rated high in antioxidants including iron, magnesium, folate, potassium, and Vitamin C.

A medium artichoke may only contain 64 calories but is very filling because of its high fiber content. Pair their green goodness with sundried tomatoes, create a healthy artichoke dip, or use them to compliment meat or pasta dishes. Cook them by roasting, grilling, or simply steaming them, then serve as an appetizer with a drizzle of lemon juice.
